Cook the noodles

Bring a pot of salted water to a boil and cook the noodles according to package instructions. Undercook them by about 30 seconds, then save some pasta water, drain, and rinse the noodles under cold water so they do not stick together.

Build the sauce

In a cold pan, add the peanut butter, chili flakes, sliced green onion, sesame seeds, minced garlic, sugar, chili crisp, rice vinegar, and dark soy sauce.

Heat the neutral oil until very hot, then carefully pour it over the cold ingredients in the pan and stir everything together.

Finish and serve

Add the noodles to the sauce and toss to coat. For a silkier texture, turn the heat to medium-low and add a splash of the reserved noodle water, then mix thoroughly.

Turn off the heat, then top with more sliced green onion, extra chili crisp, and lime wedges.
