Bring 2 liters of water to a boil in a large pot.
Add the udon noodles and cook according to package instructions, usually about 8-10 minutes.
Once cooked, drain the noodles and set aside.
Prepare the sauce
In a mixing bowl, combine the miso paste, soy sauce, sesame oil, minced garlic, and chili paste.
Whisk together until smooth and well combined.
Cook the eggs
In a small pot, bring water to a gentle simmer. Carefully add the eggs and cook for 6-7 minutes for soft-boiled.
Remove the eggs, place them in cold water for a few minutes, then peel.
Combine and serve
In a large pan over medium heat, add the cooked udon noodles and pour the sauce over them.
Toss well to coat the noodles with the sauce and heat through for 2-3 minutes.
Serve the noodles in bowls, topped with a soft-boiled egg, chopped green onions, and sesame seeds.
