In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using a stand mixer with the whisk attachment until smooth and well combined.
Add the vanilla extract and egg to the creamed mixture. Switch to the dough paddle attachment and mix for only 15-20 seconds, just until the egg is slightly incorporated.
Add the all-purpose flour, baking soda, and salt to the wet ingredients. Mix with the dough paddle until almost fully combined.
Stir in the chocolate chips until just combined into the dough.
Bake the Cookies
Preheat your oven to 175°C (350°F). Grease a baking sheet.
Use an ice cream scoop to form palm-sized balls of dough and place them about 5cm apart on the greased baking sheet. This recipe makes about 18 cookies (1.5 dozen).
Bake for exactly 11 minutes at 175°C (350°F).
Remove the baking sheet from the oven and let the cookies cool on the pan for 30 seconds before transferring them to a wire rack to cool completely.
