In a large mixing bowl, combine the lukewarm water and dry active yeast. Stir gently and let it sit for about 10 minutes until the yeast foams up.
Add approximately two-thirds of the grated Parmesan cheese, two-thirds of the everything bagel seasoning, and all of the bread flour to the yeast mixture.
Mix everything together until a shaggy dough forms. Then, use your hands to knead the dough in a circular motion within the bowl until all ingredients are well incorporated and a cohesive dough ball is formed.
Cover the bowl with plastic wrap and let the dough proof in a warm, shaded spot for at least two hours, or until it has doubled in size.
Assemble the Pull Apart Bread
Once the dough has proofed, gently punch it down to release the air. Lightly flour your work surface and transfer the dough onto it.
Flatten the dough into a rectangular shape. Sprinkle the remaining Parmesan cheese and everything bagel seasoning evenly over the flattened dough.
Using a dough scraper or knife, slice the dough into three equal strips lengthwise. Stack the strips on top of each other, then slice the stacked dough again into three equal portions widthwise.
Grease a loaf pan. Take each layered dough portion and place it sideways into the prepared loaf pan, ensuring each piece is layered with cheese on top. Drizzle the top with olive oil.
Cover the loaf pan loosely with plastic wrap and let the dough rise for another 10 minutes.
Bake
Preheat your oven to 190°C. Bake the bread for 45 minutes, or until golden brown and cooked through.
Remove from the oven, let cool slightly, and serve warm.
