Cook the chicken and rice

Place the chicken thighs in a mixing bowl and season with sesame oil and salt.

Add the jasmine rice, garlic, ginger, green onion, chicken broth, chicken bouillon powder, and turmeric powder into a pot. Do not rinse the rice.

Place the chicken thighs on top of the rice.

Bring the pot to a boil, then reduce to a simmer. Cover with a lid and simmer for 20 minutes, or until the liquid completely evaporates.

Make the sauces

While the chicken and rice cook, prepare the ginger scallion sauce by adding the ginger, green onion, and salt into a bowl.

Heat the sesame oil and neutral oil in a pan until hot and shimmering, watching carefully so it does not smoke too much.

To make the chili garlic sauce, add the garlic, ginger, sambal, sriracha, chicken broth, lime juice, and sugar into a bowl and mix.

Finish and serve
