Prepare the batter

1.

Preheat oven to 180°C. Lightly spray an 8x8 baking pan with cooking spray and line with parchment paper with a 5 cm overhang.

In a heatproof bowl, add butter and white chocolate chips and set on top of a double boiler.

Cook over medium heat, stirring occasionally until white chocolate and butter are melted (about 5 minutes).

Remove from heat and set the bowl on a wire rack.

Whisk ube jam, egg, and ube extract together.

Add in granulated sugar and whisk.

Add in brown sugar and whisk.

Slowly pour in the white chocolate/butter mixture while whisking continuously until combined.

Add in dry ingredients and fold together.

Pour batter into prepared pan and use an offset spatula to spread into an even layer.

Bake the brownies

Bake brownies for about 30 minutes or until a toothpick comes out with only a few crumbs attached.

Let the pan cool completely on a wire rack.

Once completely cooled, lift the parchment paper out of the pan and slice brownies into squares.
