A simple slow cooker shredded chicken seasoned with onion, garlic, cumin, chili powder, chipotle, oregano, and orange juice. It cooks until tender enough to shred for tacos, taco bowls, meal prep, or freezing.

Add the chicken thighs and sliced onion to the insert of a slow cooker. Sprinkle on the chili powder, cumin, garlic powder, onion powder, chipotle powder, Mexican oregano, and salt. Mix well with a spatula, then add the orange juice and stir to combine.
Cook and shred

Cover and cook on high for 4 hours or low for 6 hours. When the chicken is cooked, use a wooden spoon to press and break it into shreds against the side of the slow cooker. Stir the shredded chicken into the cooking juices.
